SALSA & CHILE PRODUCTS
Premium green chile-based sauces and salsas.
Our signature green chile sauce and salsas were so popular in my restaurants, guests often said, “You should bottle this.” So I did. We were the first to put roasted Hatch green chile—not jalapeños and onions—on grocery shelves. To keep it clean, I used lime juice instead of chemicals for shelf stability. That bold, simple approach carved out a unique space in the market.

Sunset Grille

Two storey, family friendly restaurant and bar.
Roy led the development and operation of this restaurant and bakery that became a local favorite from 1986 to 1990. With $3.3 million in annual sales at its peak, Sunset Grille was known for its welcoming atmosphere, inventive menu, soda fountain, gift shop, and Roy’s signature attention to detail—blending hospitality with high-volume efficiency in a way that set a new standard for Albuquerque dining.
